  • 1 pound of auyama, peeled and cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 cups of chicken or vegetable broth
  • 1 cup of coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

In a large pot, sauté the onion, garlic, and bell pepper until they are soft. Add in the auyama and broth, and bring to a boil. Reduce the heat and let it simmer until the auyama is tender. In a small saucepan, melt the sugar over medium heat until it transforms into a golden caramel. Pour the caramel into a flan mold and swirl it around to coat the bottom and sides. Pour the auyama’s mixture into the mold and place it in a larger baking dish filled with water. Bake for 45 minutes to an hour, or until the flan is set. Let it cool before flipping it onto a serving dish.
